Beetroot (Beta vulgaris) is a plant belonging to the Chenopodiacee family.
It is red in color and consists of edible roots. The leaves have a particular heart shape and in cultivated species they reach a length greater than 20cm.
Originally from North Africa, it arrived in Europe in 1600; at the beginning only the leaves were consumed, but later also the consumption of the root was passed.

VARIETY
There are several varieties in addition to the one used for food, red beet, there are those for fodder, those intended for feeding livestock and sugar beets; the latter is a Mediterranean plant that has been intensely cultivated in Italy since the end of the eighteenth century.
